Beaver dams are a staple at every family gathering. My family has been making these for as long as I ccan remember. They have stuck around for how delicious they are but also how quick and easy they are to make. These no-bake Beaver Dams take less than ten minutes to whip up! They look stunning to set out for holiday parties or gatherings. They’re sweet and salty because of the rich and decadent butterscotch and peanut butter and the potato sticks! We have given out this easy recipe so many times so I am so excited to finally have a place where our favorite homemade candy can live! Here’s how to make our famous beaver dams.
What are Beaver Dams?
Beaver dams or “hay stacks” are sweet and salty candies that look like just that! We use potato sticks to make ours but I have seen recipes that use chow mien noodles too. I have always used potato sticks, but you can use whatever you like! I think the potato sticks add more saltiness that balances the sweetness of the butterscotch.

Tips for Making Beaver Dams
- Use a heaping tablespoon of peanut butter if you are a peanut butter lover like I am!
- Use a very low heat when melting the butterscotch chips and peanut butter so you don’t burn it. You want the consistency to be very smooth.
- Add more potato sticks if you think there is too much mixture. However, make sure that all sticks are covered with the mixture so you don’t actually see the potato stick!
- Use a tablespoon to scoop out the mixture onto a tray with waxed paper. This makes it easy to form into a “beaver dam.” Point the tip of the spoon upwards when placing the mixture down so you can stack your beaver dams high!

Beaver Dams
Ingredients
- 2 pkgs butterscotch chips
- 1 tbsp peanut butter heaping tablespoon!
- 4 oz shoestring potatoes or potato stix add more potato stix if needed
Instructions
- Melt butterscotch chips and peanut butter in a large pot on very low heat until it is is almost melted
- Add potato stix and stir until covered with mixture
- Drop and mount small portions on wax paper
- Chill in refrigerator until cold
